Step 1
Peel the potatoes and cut into 2cm cubes. Place in a large bowl and drizzle with 2 tbs of the oil. Toss to coat. Transfer to the air fryer basket (don’t wash the bowl). Cook at 180C for 15 minutes, stopping twice during cooking to stir and toss the potato.
Step 2
Place the garlic, thyme and remaining 1 tbs oil in the same bowl. Return the potato and toss to coat. Transfer half the potato to the air fryer and cook at 200C for 10-15 minutes, stopping to toss once or twice, until crisp and golden. Transfer to a tray and repeat with remaining potato.
Step 3
To serve, return all the potato to the air fryer and reheat at 200C for 10 minutes, stopping to toss once halfway through cooking, until hot and crisp. Transfer to a serving bowl, season with salt and sprinkle with extra thyme leaves.
