Step 1
Place flour, caster sugar, cinnamon, dry yeast and bread improver into a large mixing bowl. Add 400ml of warmed water. With dough hook on mix master, mix on slow speed until mixture comes together, then mix on medium speed for 5 minutes. Remove bowl from mix master, cover with Glad Wrap and then a tea towel. Leave in a warm place until it has doubled in size.
Step 2
While dough is rising, prepare apple filling. Peel, core and dice apples. Place in a medium saucepan with 1/3 cup water and 1 tablespoon extra sugar. Cover. Bring to boil and cook over medium heat for 5-10 mins, until apple softens. Remove from heat and stir in sultanas. They will soak up any extra water.
Step 3
Once dough has doubled in size, remove from bowl and place onto a lightly floured surface. Cut into two pieces. Roll one piece out to form a rectangle approx. 33cm x 25cm. Place half of the apple mixture on top of this dough and sprinkle with half of the chia seeds. Roll up from the long edge to form a log. Cut into approximately 3cm pieces. Place each piece onto a lightly greased tray. Repeat process for the remaining dough.
Step 4
Preheat oven to 180C degrees. Place each tray in a warm place until scrolls have doubled in size. Once scrolls have risen, place in oven and cook for approx 20 minutes until golden and cooked.
Step 5
To prepare icing: Mix together icing sugar, butter and milk until a thick paste like consistency. Drizzle scrolls with the icing.
