Drain the artichoke hearts and place them in a food processor. Pulse process until they are mashed. Heat the oil in a saucepan over medium heat. Add the garlic and cook, stirring frequently, until soft and fragrant. Quickly stir in the egg and mashed artichoke. Reduce the heat to low and cook for 5 minutes, stirring constantly. Remove the pan from the heat. Stir in the Parmesan and half of the breadcrumbs. Using a small spoon, form the artichoke mixture into small balls. Roll them in the remaining breadcrumbs and place on a plate. Chill the artichoke balls for 2 hours. Preheat the oven to 350 degrees F. Transfer the artichoke balls to a baking sheet and place in the oven. Bake at 350 degrees F for 12-15 minutes or until light golden brown and heated through. Serve hot.
