Step 1
Preheat oven to 425 degrees F. Line a large rimmed baking sheet with foil.

Add cut potatoes and green beans to the baking sheet, then drizzle the avocado oil all over, using your hands to help coat all the pieces with a little oil. Season well with the salt, black pepper and garlic powder. Arrange the potatoes and green beans in an even layer, giving them plenty of space, so they aren't over crowded.
Step 3
Wrap each bratwurst with one strip of the bacon, making sure the bacon is not overlapping. Lay the bratwurst on top of the potatoes and green beans in an even layer. This will allow the bacon drippings to help season and cook the potatoes and green beans.
Step 4
Roast in the oven for 40 to 50 minutes, turning the bratwurst over half way through, and stirring the potatoes and green beans around as well. Bratwurst should reach an internal temperature of 160 degrees F when fully cooked.
