Step 1
Place soy sauce, oyster sauce, ginger and 1 tablespoon sherry in a large bowl, and mix to combine. Add beef strips, cover and refrigerate for 15 minutes to marinate.
Step 2
Heat half the oil in a wok or large non-stick frying pan. Drain the beef from the marinade. Cook beef over high heat in batches for 3 minutes or until nearly cooked through. Remove and wipe pan clean with paper towel.
Step 3
Heat remaining oil in the wok over high heat. Add onion and cook for 4 minutes or until just tender. Return the meat to the wok, along with the asparagus and snow peas, and stir-fry for a further 2 minutes. Serve immediately with steamed rice.
