Step 1
In a medium skillet, cook ground beef until there is no longer any pink showing; 7-9 minutes. After beef is cooked, drain fat completely and return beef to the pan.
Step 2
To the beef add taco seasoning, water and enchilada sauce (make my homemade enchilada sauce if you like). Continue to cook over medium heat for 3-5 minutes until mixture begins to thicken.
Step 3
Reduce to a low heat setting and add black beans, corn and tortilla strips. Cook for an additional 3-4 minutes, stirring gently.
Step 4
Sprinkle the cheese over top of the dish and stir in just long enough for it to melt.
Step 5
Remove from heat and serve immediately with any garnishes of your choice.
