Step 1
Peel potatoes. Trim the bottoms of the potatoes. Cut the potatoes in 3rds crosswise so there should be 12 cylinders. Place cylinders in a bowl of cold water. Soak for 20 minutes to remove excess starch.
Step 2
Preheat oven to 400°. Smash garlic with a knife. Once the potatoes have soaked, heat skillet over medium high heat. Add oil. Once hot, add potatoes cut side down. Cook for 5-7 minutes until golden brown. Flip potatoes. Add garlic, thyme and chicken broth. Cook for another 2-3 minutes. Place diced butter scattered on top of potatoes.
Step 3
Bake until tender for 30-35 minutes. Serve drizzled with pan juices.
