Step 1
Crumble the ground chuck and Italian sausage into a large stock pan over medium-high heat. Cook until it's no longer pink. Drain off the excess grease.

Pour in the chili beans, spicy chili beans, diced tomatoes, and tomato paste. Mix in the onion, celery, green and red bell peppers, chili peppers, bacon, bouillon cubes, and beer. Season it with chili powder, Worcestershire sauce, garlic, oregano, cumin, hot sauce, basil, salt, pepper, cayenne, paprika, and sugar. Stir it well.
Step 3
Cover the pot and simmer it over low heat for at least 2 hours, stirring occasionally. The longer it simmers, the better the flavor.
Step 4
Taste and season it with salt, pepper, and chili powder, if needed. Remove it from the heat. Ladle it into bowls and top it with corn chips and shredded cheddar cheese. Serve it and enjoy!
