Preheat oven to 350ºF.

Line 3 sheet trays with parchment paper.

In a small bowl, whisk together flour, baking soda and salt. Set aside.

In the bowl of a stand mixer, cream together brown butter, brown sugar and granulated sugar. Add egg and vanilla. Mix well.
Step 5
Add flour mixture all at once and mix until just combined. Fold in chocolate chips.
Step 6
Drop by 2-tablespoons full onto the sheet trays (only drop 6 cookies per sheet tray).
Step 7
Bake for 7 minutes. Remove from the oven and slam each sheet tray on the counter a couple of times, flattening the cookies out. Return to oven. Repeat again after 4 mins. Pop back in the oven for 1-2 more minutes.
Step 8
Remove from the oven and slam sheet trays one last time. Let cool on cookie sheet for a few minutes. Transfer to a cooling rack and let cool completely.
