Preheat the oven to 375°F. Line a baking sheet with foil. Parchment paper also works well. Lay the bacon slices out in a single layer on the prepared baking sheet. Mix together the brown sugar and cinnamon in a bowl. Then work in the diced jalapenos by hand. Rub the bacon with the brown sugar, turn each slice over and run that side too. Bake for 12-15 minutes, depending on how crunchy you like your bacon. Lay the bacon on parchment paper to cool and drain. It will stick to paper towels!
