Step 1
Cut Chicken Breast into cutlets by placing the breast flat on a cutting board, then slicing it in half horizontally with one, careful cut.
Step 2
Mix together the Old Bay Blackened Seasoning and Cajun Seasoning and then liberally season the chicken cutlets on all sides.
Step 3
Add the vegetable oil to a large skillet and heat to medium high heat. Once the oil is hot, add the cutlets to the skillet and cook for two minutes per side. Remove from the skillet and place on a rack over a baking sheet. Place into an oven preheated to 400ºF and bake for 10 minutes.
Step 4
Once the chicken is 165ºF, it is finished. Remove from oven and serve with your favorite Cajun inspired side dishes. Enjoy!
