Step 1
Preheat oven to 200°C. Line 2 baking trays with baking paper. Sift flour, salt and cayenne pepper into a bowl. Add potato, three-quarters of the cheese, onions and lemon thyme. Stir until combined.
Step 2
Place milk, eggs and mustard into a jug. Whisk to combine. Add to flour mixture. Stir until combined (don't over-mix or bread will be tough). Divide in half.
Step 3
Shape each half into a 15cm (diameter) round. Place onto prepared trays. Sprinkle remaining cheese evenly over loaves. Sprinkle lightly with flour.
Step 4
Bake for 35 to 40 minutes, swapping trays halfway through cooking, or until bases of loaves sound hollow when tapped. Serve warm with chowder or lamb.
