Step 1
Place the Gouda cheese, chilli, spring onion, coriander, chilli powder, salt and black pepper in a small mixing bowl. Mix well. Preheat your grill to the medium setting.
Step 2
Place one slice of bread on your grill pan rack and spread the cheese mixture over evenly.
Step 3
Place under the grill for about 2 minutes or until the cheese is melting. Watch carefully to avoid burning the edges of the bread. Place the second slice of bread on top of the cheese and grill again for about 1 minute or until golden.
Step 4
Flip the toastie over and grill the other side for 30 seconds to 1 minute, until golden. Cut in half or into quarters if you prefer and serve with a crisp mixed salad. To make this toastie extra special, you could dip it in a little sweet chilli sauce, tomato ketchup or light mayonnaise if you like, and adjust the calories accordingly.
