Cheesy Hash Brown Casserole

butter

green chiles, diced

jalapenos, finely diced

poblano chile, diced

onions, diced

hash brown potatoes (2 bags)

Salt and ground pepper

grated sharp Cheddar

grated Monterey Jack

Melt the butter in a large skillet and saute the chiles and onions until browned, almost blackened. Add the frozen hash browns, some salt and pepper and toss together. Tip into a buttered baking dish and top with the cheese and bacon. Bake until hot and bubbly, about 30 minutes.

Great hash brown casserole. I am definitely going to make it again.

Had it for Christmas breakfast.  Excellent.  Like recipes you fix night before.  Paired this one with a make ahead sausage casserole. No cooking Christmas morning.  <br /><br />

Great recipe! Read the reviews first, which always helps. Husband and baby loved it! Added vegan chorizo and vegan sausage! Yum!! 

This is a good recipe if you make multiple adjustments - otherwise it is really dry.  As with others, I took half the cheese and mixed it in with the potato mixture; I also used about 1/4 of the hot pepper mix so children would be able to eat it.  Lastly, I whipped 8 eggs and mixed them in with the potatoes.  THEN I finished with the cheese topping and bacon.  Baked it at 325 until the eggs were set up.  Then it was a real hit with the entire family.<br />

This recipe had all the makings of something great but in my opinion it was barely good.  Very little flavor, even with all those peppers.  Luckily I had the forethought to mix about half the cheeses and some of the bacon into the potatoes instead of it all being on top. One reviewer said that she browned the hashbrowns after adding to the skillet.  The recipe does not say to do that and unfortunately I read that review after the fact.  Maybe that would have made a small difference in taste but I doubt it.This dish looked amazing when it came out of the oven and I was so disappointed that it was so bland and flavorless.  AND by the way, this recipe says serves 4-6; I knew it would be a lot more than that with the 2 bags of hash browns, but please know this recipe serves 12 people easily.
