Step 1
Place the sausages, carrot, onion, breadcrumbs and one of the eggs in a large bowl. Use your hands to mix until combined.

Add the Vegemite and cheese to the sausage mixture and mix until well combined.
Step 3
Preheat oven to 200C/180C fan-forced. Line 2 baking trays with baking paper. Lightly whisk the remaining egg in a bowl.
Step 4
Cut the pastry sheets in half. Place a quarter of the mince mixture along the centre of each piece of pastry. Brush the long edge of the pastry with the whisked egg. Fold pastry over filling, pressing to seal. Cut each roll into 5 pieces.
Step 5
Place the rolls, seam side down onto the prepared trays. Brush the pastry with egg. Use a small sharp knife to lightly score the tops a few times to allow the steam to escape.
Step 6
Bake for 20-25 minutes or until cooked through and golden. Serve with tomato sauce, if desired.
