Step 1
1. Flatten chicken to ¼ -in. thickness. In a small bowl, combine coconut oil, 2 Tbsp chicken broth, 2 Tbsp lemon juice, garlic, and chili flakes. In another small bowl combine nutritional yeast, parsley, and salt. Coat chicken with the dry mixture, dip in "sauce" mixture, then coat again with dry mixture.
Step 2
2. In a heated large nonstick skillet, cook 3 chicken breast halves in 1-1 1/2 tsp oil for 3-5 minutes on each side. Remove from the skillet and keep warm. Drain drippings. Repeat with the remaining chicken. Remove and keep warm.
Step 3
3. In the same pan, add the remaining 3 tsp. of oil, the remaining broth(1/4 cup) and lemon juice. Bring to a boil. Boil, uncovered, until sauce is reduced by a fourth. Drizzle over chicken and serve with cooked Quinoa.
