Step 1
Heat the oil in a large saucepan over medium-high heat. Add 1/3 of the steak and cook, turning often, for 2-3 minutes or until browned all over. Transfer to a bowl and repeat with the remaining steak.
Step 2
Add cumin to pan and cook, stirring, for 30 seconds or until aromatic. Stir in the water, onions and garlic, and bring to the boil. Reduce heat to low and cook, covered, stirring often, for 10 minutes or until onions are soft.
Step 3
Stir in the steak and any juices with the tomatoes, stock, chillies, salt and pepper. Increase heat to medium-high and bring to the boil. Reduce heat to low, cover and cook, stirring occasionally, for 2 hours or until the steak is very tender.
Step 4
Combine the polenta and extra stock in a small bowl. Stir into the steak mixture and cook, uncovered, for 5 minutes or until the sauce thickens slightly. Stir in the coriander and serve immediately.
