Step 1
Preheat oven to 350 degrees F.

Grate zucchini and squeeze out excess moisture, set aside.
Step 3
In a medium mixing bowl combine flour, oats, flax, baking soda and salt. Whisk to combine.
Step 4
Add eggs to a stand mixer bowl and beat on medium for 30 seconds.
Step 5
Add melted butter to eggs along with vanilla extract and brown sugar.
Step 6
Beat until thoroughly mixed.
Step 7
While stand mixer is on low slowly add in the dry ingredients.
Step 8
Stop the stand mixer and gently fold in the zucchini and chocolate chips.
Step 9
Pour into a prepared 9×9 pan. Add any additional chocolate chips on top.
Step 10
Place in oven, middle rack, and bake 18-22 minutes or until a toothpick comes out clean.
Step 11
Remove from oven and place pan on a cooling rack – let cool 10-15 minutes.
Step 12
Serve and enjoy.
