Preheat oven to 180C. Grease two 22cm loaf pans.

Melt chocolate in a microwave and allow to cool.
Step 3
Put instant coffee and cocoa powder in a 2-cup (or larger) glass measuring jug. Add enough boiling water to come up to the 1 cup measuring line. Mix until powder dissolve. Stir in whiskey and salt. Allow to cool.
Step 4
Beat softened butter until fluffy. Add sugar and beat until well combined. Add the eggs one at a time, beating well between each addition. Add the vanilla extract, baking powder and melted chocolate and beat to combine.
Step 5
Beat in a third of the coffee mixture then beat in 1 cup flour. Repeat with remaining flour and coffee mixture. Spoon batter into prepared pan and smooth top. Bake for approximately 55 minutes.
