Step 1

Place a casserole dish filled three-quarters full with water onto bottom shelf in oven. Preheat oven to 180°C. Grease and line a rectangular cake tin (approx. 20 x 30 cm) with baking paper and set aside.

Step 2

Place oil, water, vanilla, vinegar, bicarbonate of soda, sugar, flour, cocoa powder and salt into mixing bowl and mix 30 sec/speed 5.

Step 3

Scrape down sides of mixing bowl with spatula and mix 10 sec/speed 6.

Step 4

Pour mixture into prepared cake tin and place on the shelf above casserole dish with water and bake for 30-35 minutes (180°C) or until a wooden skewer inserted into the centre of the cake comes out clean. Allow to cool, then decorate as desired to serve.
