Step 1
Crack the eggs into a bowl and beat them with a fork for a couple of minutes. Set aside.

Remove the chorizo from their casings and put them in a skillet.
Step 3
Heat the up the skillet over medium high heat.
Step 4
Crumble the chorizo into small pieces with a spatula while it's cooking. It'll take about 8 minutes to fully cook.
Step 5
Then transfer the cooked chorizo to a paper towel lined plate to drain.
Step 6
Reduce heat to medium low and add the eggs to the skillet.
Step 7
Add the chorizo back to the skillet with the eggs.
Step 8
Stir the chorizo and eggs together.
Step 9
Continue to stir until the eggs are fully cooked. This will take about 5 minutes.
