Preheat the oven to 350 degrees F.

Lightly grease a 7x11-inch baking dish or an 8x8-inch square baking dish.

In a small bowl, mix the quinoa with the cinnamon, the nutmeg, and the cloves.

Pour the quinoa mixture into the prepared dish.

Sprinkle the apples and the raisins on top of the quinoa.

In the same bowl you used to mix the quinoa, beat the eggs.
Step 7
Whisk the soy milk and the maple syrup into the beaten eggs.
Step 8
Pour the egg mixture over the top of the apple-raisin layer.
Step 9
Lightly stir the fruit and the quinoa, to just partially submerge the mixture.
Step 10
Sprinkle the almonds on top of the quinoa-egg mixture.
Step 11
Bake until the casserole is mostly set with only a small amount of liquid left, about 1 hour.
Step 12
Allow the bake to cool.
Step 13
Cover and refrigerate for at least 8 hours and up to overnight.
Step 14
Slice and microwave before serving.
