Coconut Daiquiri

Step 1

1 Make the demerara syrup: In a small pan over medium heat, combine the demerara sugar the water and bring to a boil, stirring until the sugar is dissolved

2 Boil for about 30 seconds, then remove from the heat and let cool slightly

3 Transfer to a bottle and refrigerate until needed

4 Make the drink: Chill a cocktail coupe in the freezer for at least 5 minutes, or until frosted

5 When the coupe is sufficiently chilled, fill a cocktail shaker with ice

Step 6

6 Add the rum, lime juice, syrup and bitters, close the shaker and shake hard for 30 seconds

7 Double-strain into the chilled glass and serve right away
