Step 1
Preheat oven to 375 degrees F. Coat a 9- x 13-inch baking dish with cooking spray.

In a medium bowl, combine flour, baking powder, and salt; set aside.

In a large bowl, beat coconut oil and sugar until light and fluffy. Add egg, sour cream, coconut extract, and vanilla extract; mix well. Slowly beat in flour mixture until combined. Press dough evenly into baking dish.

Bake 13 to 15 minutes or until edges are golden. Let cool.
Step 5
To make the Frosting, in a large bowl, beat butter, milk, coconut extract, and confectioners' sugar until smooth and creamy. Stir in 1/2 cup coconut. Spread frosting evenly over cookie bars and sprinkle with remaining 1/4 cup toasted coconut (see Note). Slice into bars and serve.
