Step 1
Preheat oven to 375°F (use convection setting if available). Whisk together flour and salt in a shallow dish, and set aside. Whisk together egg, egg white, and water in a second shallow dish. Process chips in a food processor until finely ground; transfer chip crumbs to a third dish.
Step 2
Cut fillet crosswise into 1 1/2-inch strips. Lightly coat each fish “stick” in flour mixture, then dip in egg mixture, allowing excess to drip off. Dredge in chip crumbs, pressing lightly to adhere. Place fish sticks on a baking sheet sprayed with cooking spray.
Step 3
Bake in preheated oven until golden and fish flakes easily with a fork, about 15 minutes. Serve immediately.
