Step 1
Pat the pork belly dry on both sides. On the flesh side, cut lengthwise into strips. Flip over and score a criss-cross pattern into the fat (being careful not to cut too deep).
Step 2
Rub the Mingle BBQ Pork Hoisin Rub onto the flesh side of the pork. Tightly wrap the pork in foil, leaving the skin exposed.
Step 3
Brush the skin with white vinegar and sprinkle with a little salt. Air fry at 180°C for 20 minutes.
Step 4
While the pork is cooking, prepare rice according to packet instructions.
Step 5
Remove pork from the air fryer, brush the skin with olive oil, then air fry again at 200°C for 10 more minutes. Let the pork rest for 10 minutes before slicing.
Step 6
Serve rice topped with sliced pork belly, grated carrot, chopped spring onion, coriander (if using), and 1 tsp Mingle Furikake Seasoning per serve. Drizzle with soy sauce if desired.
