Step 1
Heat the oil in a frying pan over medium heat. Season duck with salt and pepper. Add duck to the pan and cook for 5 minutes each side or until golden brown and cooked through. Remove from heat and set aside for 10 minutes to cool slightly. Use a fork to finely shred duck with the grain.

Add enough oil to a medium frying pan to reach a depth of 2cm and heat over medium-high heat. Add 4 wonton wrappers and cook, turning occasionally, for 1 minute or until golden brown. Step 3
Place duck, bean sprouts, carrot, green shallot and mint in a bowl. Combine lime juice, palm sugar, fish sauce and sesame oil in a small bowl. Drizzle over duck mixture and gently toss to combine. Top wonton wrappers with duck mixture. Place on a serving platter and serve immediately.
