Ingredients: 1 English cucumber, sliced into rounds; 3 tablespoons plain thick yogurt (can sub mayo for dairy-free); 2 tablespoons mayonnaise (can be light); 1 tablespoon apple cider vinegar (or 1 teaspoon white vinegar); ¼ cup minced red onion; ½ teaspoon black pepper; ¼ teaspoon sea salt

This is the creamy cucumber salad recipe we've been making forever. It's the perfect balance of creamy and crunchy and it goes well with nearly every main dish. It's super simple to make and is always a hit!

Cucumber Salad

cucumber,

plain thick yogurt (can sub mayo for dairy-free)

mayonnaise (can be light)

apple cider vinegar (or 1 teaspoon white vinegar)

red onion

black pepper

sea salt

Slice the cucumber and place the rounds into a medium-sized bowl.

Add the remaining ingredients and toss to coat.

I made this for my family last night to go with your baked pork chops. It was delicious!

Absolutely delicious! Highly recommend this recipe. Was such an incredible addition to our summer BBQ. I do want to call out the importance of a high quality feta (grass fed, grocery store brand) and the English Cucumbers (so much more crunchy!). Both things really made a difference. I adjusted some of the portions because we like it creamy!!! E.g. extra mayo and feta ;)

I made this to go with your Juicy Baked Chicken Thighs, which I have made millions of times, and it is so wonderful!  Crisp, cool and full of flavor.  In addition, the next day when I ate it, I anticipated that the cucumbers would have lost their crispness, but they were just as crispy and crunchy as the night before! This salad rocks!  It's deceptively simple...yet turns out so very crisp, creamy Summery scrumptious. 😁

Had no red onion, but yellow subbed in just fine.  I added a quarter tsp dry dill to my batch too.
