Ingredients: 1 pint cherry tomatoes; 1 medium sized cucumber (I like to use a seedless hothouse cucumber); 1/2 small onion, diced; Small handful fresh herbs; 1 tablespoon olive oil; 1 tablespoon red wine vinegar; Salt and pepper, to taste

This Cucumber Tomato Salad is easy to make, healthy and so refreshing!

Cucumber Tomato Salad

cucumber

onion,

herbs

olive oil

red wine vinegar

Salt and pepper,

Add all ingredients to a large bowl and stir until combined.  Serve salad immediately or refrigerator up to 3 days.

I've always made tomato sandwiches, and cucumber sandwiches, I love them, but never thought to make this kind of salad...and am sure glad I found your site...thanks for sharing your recipes....everything looks great.....This salad will be on my table always...now I have to go back to the store and pick up some Enlish cucumbers, thanks for the information on those....hugs!!!
