Step 1
Drain tofu and place on a folded paper towel on a plate for 5 minutes.
Step 2
Break chocolate into pieces and melt in a microwave safe bowl for 30 seconds. Stir and microwave for another 30 seconds, then stir until melted (microwave times may vary so be careful not to overmelt as the chocolate will harden).
Step 3
Place drained tofu to a food processor and top with half of the melted chocolate.
Step 4
Blend, stopping to scrape sides with a small spatula.
Step 5
Add remaining chocolate, blend and scrape again.
Step 6
Pour in the maple syrup and half of the raspberries and blend until aerrated to a fluffy texture.
Step 7
Spoon into four dessert dishes and top with remaining raspberries.
Step 8
Sprinkle with dark chocolate shavings (optional).
Step 9
Refrigerate until chilled. Enjoy!
