Step 1
In a large mixing bowl, add butter and sugar and mix until smooth and creamy.
Step 2
Add vanilla extract and egg and mix until well incorporated.
Step 3
In a separate bowl combine baking powder and flour. Slowly add this mixture to the wet ingredients. Note - the dough will be very stiff and may need to be kneaded by hand if your mixer has difficulty. To a well-floured surface, remove the dough from the bowl with wet hands.
Step 4
Finish kneading the dough by hand, adding additional flour as needed until the dough resembles play-doh.
Step 5
Divide into small sections and roll out onto a floured surface to ¼ inch thick. Use your desired cookie cutters. Add remaining dough to the next section. Repeat process.
Step 6
Transfer to a baking stone/sheet and bake for 6-8 minutes.
Step 7
Remove from oven and let rest on the baking sheet for 5 minutes before transferring to a cooling rack.
