Step 1
Bring a pot with 1,5 litres of water to boil. Remove from the hob. Add the sugar and mix until fully dissolved. Then add the spices, the lemon juice and the orange slices to the water.
Step 2
Gently and carefully peel the pears. Add to the boiling water mixture, put on the hob and bring back to a boil. Once boiling, simmer for about 20 minutes. Check on your pears regularly. You want them to be soft but not disintegrate.
Step 3
If you wish to decorate the same as in the pictures: Hold the cocktail glass and run a little orange pulp along the outside of the rim until it is covered with juice.Fill a saucer with enough sugar to coat the entire rim of the glass.Hold the glass upside down and dip the wet rim into the sugar. Press gently and twist it around until your glass rim is evenly coated. Fill each glass with one cup of chocolate orange chia pudding, then arrange one full poached pear over the chia pudding.
