Step 1
Feed your starter at least 8-12 hours before mixing the dough
Step 2
Add all of the ingredients to a bowl or your stand mixer.

Knead on the low-medium speed in the mixer for about ten minutes.
Step 4
Cover the dough and either set it on the counter until it has risen, but not quite doubled in size. If you need to put in the fridge overnight or for a longer period of time, that is fine but it will take longer to rise.
Step 5
Shape the breadsticks. Put the dough on a floured work surface, and use a bench scraper to divide them up. You can weigh each one on the scale so they are all roughly the same size. Roll them on the counter until they are long and a log shape.
Step 6
Place them on a baking sheet lined with parchment paper. Cover with a tea towel and let rise 1-2 hours
Step 7
Bake in a preheated oven at 400 degrees for 20 minutes.
Step 8
Melt butter, and mix with garlic and herbs.
Step 9
Brush butter mixture on breadsticks when they are finished.
