Step 1
Place the eggs in a saucepan in which theywill fit snugly, add a pinch of salt and coverwith cold water. Bring to the boil, then reducethe heat and simmer for 6 minutes. Drain andrun under cold water, changing the water acouple of times, for about 10 minutes, or untilcompletely cold.

Peel the eggs, finely chop and tip into a bowl.Add the hollandaise sauce and chives, seasonand mix to combine.
Step 3
Lay the bread on the work surface andspread with butter. Lay slices of the smokedsalmon over ½ the bread, then divide the eggmixture on top, spreading it evenly.
