Step 1
Beat the egg whites in a large mixing bowl until stiff peaks are formed. Gradually start adding caster sugar, all the while beating. Preheat the oven to 120℃ and cover a large baking tray with some parchment paper. Using a spoon, grab portions of the meringue mixture and drop them onto the baking tray. Bake on the bottom shelf of the oven for 1hr-1hr15mins until the meringues have hardened completely. Let them cool.
Step 2
In a big bowl, whip the cream with the icing sugar. Blend 1/3 of the strawberries into the strawberry sauce. Separate ¾ of the cooled meringues, crush them, and gently mix them with chopped strawberries. Finally, add strawberry sauce to the mixture. Fill the bowls with the mixture, then crush the leftover meringues and sprinkle the pieces over the top.
