Step 1
Heat 2 teaspoons of olive oil in a pan over medium heat. Cook and stir the onion and green capsicum in the hot oil until the onions are softened, about 5 to 10 minutes. Add the steak strips and cook for another 6-8 minutes. Season with Mingle’s Fajita spice blend and transfer the mixture to a bowl.
Step 2
Brush one side of each tortilla with the remaining oil. Place one tortilla, oil-side down, in the same pan. Sprinkle half of the steak mixture, half of the onion mixture, and half of the cheese on top. Place a second tortilla, oil-side up, over the cheese layer and press down with a spatula to seal.
Step 3
Cook the quesadilla over medium heat until the cheese melts and the tortillas are browned, about 3 to 4 minutes per side.
Step 4
Remove the quesadilla from the pan and cut it into wedges. Repeat with the remaining ingredients to make the second quesadilla.
