Wash the potatoes and peel them with a potato peeler. (Now put them in a pot with hot water, boil a few seconds (and then remove the water by pouring the potatoes into a colander. Let them cool and cut them into slices. (3)

Pour the potatoes into a non-stick pan with extra virgin olive oil and brown them. (Halfway through cooking add the butter (and continue to cook for another couple of minutes, stirring occasionally. Turn off when the potatoes are golden brown and crunchy. (Serve accompanying them with mayonnaise, ketchup or any salt you prefer.
