Ginger Honey Glazed Carrots

Salt and pepper

In a small saucepan, melt butter and stir in ginger. Add honey and stir to dissolve. Stir in carrots and toss to coat. Pour in water and cover to steam. Stir occasionally and cook 8 minutes or until tender. Season to taste.

Delicious!  Everyone loved them. Pleasantly gingery.

I followed the recipe and it came out so delicious. I only added half the water and as another reviewer recommended I added a little corn starch to thicken up the sauce so it would cling to the carrots. Added a little sea salt and fresh pepper at the end of the cooking. It’s my new favorite way to cook carrots !

My kids and husband said these are the best carrots they've ever had. I used three bunches of carrots, so about 24 smallish carrots altogether. I tripled the sauce ingredients, but not the water, and I cut the carrots about 1" thick. I did add a little less than 1/2 tsp cayenne pepper to add some zing, which we all agreed made them extra tasty.
