Preheat your oven to 350F.

Rinse your quinoa then cook in rice cooker or stove according to instructions.

Once cooked, transfer to a bowl and fluff.

Place quinoa, banana, nut butter, milk, vanilla, and eggs in a blender or food processor. Blend until smooth. The batter will be thick and look like pancake batter.

In another bowl, mix your dry ingredients, sifting together flour and baking soda/powder.

Combine your dry ingredients with your banana quinoa batter until smooth. Stir in any optionals ingredients. I added in dark chocolate chips.
Step 8
Pour into a lined or greased 8×4 bread pan
Step 9
Place in over for 50-55 minutes, cover with foil half way to prevent browning. Depending on your oven, it could take 45 minutes or up to 55 minute.
