Process briefly until the mixture comes together but is still a bit chunky

Roll mixture into 10-12 round balls and flatten to resemble a fishcake
Step 4
Heat large frying pan on medium, drizzle olive oil then place ½ the fishcakes in and cook for 5 mins (until golden browned on both sides) press down on the fishcakes with a spatula while cooking
Step 5
Repeat with remaining fishcakes
Step 6
Serve on lettuce leaves & dip in Mingle’s sweet chilli sauce
