Step 1
Peel back husks from corn cobs. Remove and discard silk. Using picture as a guide, tie husks above cobs with string. Heat a chargrill pan or barbecue grill on high heat.

Brush cobs with melted butter. Season. Cook corn, turning occasionally, for 8 to 10 minutes, or until tender
Step 3
Meanwhile, heat 1 tsp oil in a small frying pan over medium heat. Add bacon. Cook for 2 - 3 minutes or until golden and crisp. Transfer to paper towel to drain.
Step 4
Add remaining oil to the pan over medium heat. Add breadcrumbs. Cook for 2 - 3 minutes or until golden. Add paprika and bacon. Season. Stir to combine. Remove pan from heat.
Step 5
Place corn on a serving tray. Sprinkle with bacon crumb. Drizzle over sour cream. Top with chilli. Serve with lime wedges.
