Ham and Cheese Muffins


· 2 cups self-rising flour· 1/2 teaspoon baking soda· 1 cup milk· 1/2 cup mayonnaise· 1/2 cup finely chopped, fully cooked ham· 1/2 cup shredded cheddar cheese· shredded cheese (optional)


Step 1note: As a substitute for each cup of self-rising flour, place 1 1/2 teaspoons baking powder and 1/2 teaspoon salt in a measuring cup.Step 2Add enough all-purpose flour to equal 1 cup.Step 3In a large bowl, combine flour and baking soda.Step 4Combine remaining ingredients; stir into dry ingredients just until moistened.Step 5Fill greased or paper-lined muffin cups two-thirds full.Step 6Bake at 425 degrees for 16 to 18 minutes or until muffins test done.Step 7Sprinkle with shredded cheese while still hot if desired.
