Preheat the oven to 190°C and line a baking tray with baking paper.

Brush the pork with char siu sauce, then place on the baking tray and bake, basting pork halfway through with pan juices, for 15 minutes or until cooked through. Cover loosely with foil and rest for 5 minutes.
Step 3
Meanwhile, cut the choy sum in half, separating the stalks and leaves into two bowls. Heat sesame oil in a frypan over medium heat. Add garlic and ginger, then stir-fry for 10 seconds or until starting to brown. Increase heat to high, add choy sum stalks, spring onion and 1 tbs water, then stir-fry for 2 minutes. Add choy sum leaves, snow peas and soy sauce, then stir-fry for a further 1-2 minutes until the vegetables are slightly tender but crisp.
Step 4
Slice the pork and divide among plates with the vegetables. Drizzle over any pan juices, sprinkle with sesame seeds and serve with rice.
