Roughly chop the ginger, and combine with 3 cups of water in a heavy-bottomed saucepan.

Bring to a boil and keep at a rolling boil for 2 minutes, stirring often.

Step 4
Place a fine-mesh strainer over a bowl and pour the ginger water through the strainer.

Add honey to the ginger water and stir to dissolve. Taste, and add more honey if you prefer a sweeter flavor.
