Step 1
Preheat oven to 425°. Toss green beans with olive oil and season with salt and pepper. Spread beans into an even layer on a large baking sheet and roast until golden and tender, 12 to 15 minutes.

In a large skillet over medium heat, heat oil. Add garlic and cook until fragrant, 1 minute. Add green beans and season with salt and pepper. If using, squeeze lemon over beans. Cook, stirring occasionally, until beans are tender, 6 to 8 minutes.
Step 3
Bring a large pot of salted water to a boil. Meanwhile, prep an ice bath by filling a large bowl with ice and water. Boil green beans for 6 to 7 minutes, until tender. Transfer beans immediately to ice bath with a slotted spoon to stop cooking.
Step 4
Drain beans and transfer to serving dish. Season with salt and pepper and serve.
Step 5
Preheat a large grill pan over medium-high heat or a grill pan to high. In a large bowl, toss green beans with olive oil and garlic and season with salt and pepper.
Step 6
Place green beans on grill pan and cook until charred all over, about 7 minutes total. (If you’re using a grill, lay a thick piece of foil over grates and place green beans on top. Grill as instructed.)
