Step 1
In a large mixing bowl combine flour, sugar, salt, and baking powder, and mix well.
Step 2
Add in egg, milk, butter, and vanilla, and mix well using a hand mixer.
Step 3
Place 2 tablespoons of batter (makes 1 pancake) onto a griddle or pan and cook on each side. Note: If using a griddle, heat to 275 degrees.
Step 4
Place pancakes on a flat surface to fully cool.
Step 5
Once cool, place a piece of parchment paper between each pancake to prevent sticking.
Step 6
Place pancakes in the freezer for about 5 hours.
Step 7
Once frozen, tightly wrap pancakes or place them in heavy duty freezer bags. Tip: Be sure to press the air out.
Step 8
Write the date on the bags with a Sharpie (or use some other labeling method) so you know when these pancakes were frozen.
