Step 2
Chill the dough for 30 minutes to an hour.

Form the dough into 20 evenly sized balls, and place onto a parchment lined baking sheet.
Step 4
Preheat the oven to 400 degrees.
Step 5
Bake for 10 minutes.
Step 6
As soon as the cookies are cool enough to handle, gently roll them in the ¼ cup of confectioner sugar substitute. Let cool completely, and then roll them in the sugar substitute again before serving.
