Step 1
Cook sweet potato in boiling water for 8 minutes or until almost tender. Drain.
Step 2
Combine garlic, cumin and cayenne, and rub over lamb. Heat oil in large non-stick frying pan over medium-high heat. Cook lamb for 4 minutes each side or until cooked to your liking. Place on plate and cover with foil.
Step 3
Meanwhile, combine orange juice, sugar and honey in saucepan over medium heat. Simmer, uncovered, for 2 minutes. Add sweet potato. Cook, turning often, for 2 minutes. Season with salt and pepper.
Step 4
Place couscous in heatproof bowl. Use a fork to stir in boiling water. Cover, set aside for 5 minutes. Reserve some coriander leaves. Finely chop remaining and stir in with extra orange juice. Season with salt and pepper.
Step 5
To serve, slice lamb. Serve couscous topped with sweet potato and lamb, garnish with reserved coriander. Serve with salad leaves.
