Export 2 ingredients for grocery delivery
Step 1
Zest the lemons and then juice the lemons.
Step 2
Put all ingredients EXCEPT the butter into the Vitamix. Start at Variable 1 and gradually increase to Variable Blend for 5 minutes. The mixture will increase in volume, change color, and will become quite hot.
Step 3
Reduce to Variable 3, remove the lid plug and add the pieces of butter through the lid. Blend for 30 more seconds. Be careful with the steam coming out of the top!
Step 4
Allow to cool to room temperature then refrigerate. The lemon curd will thicken as it cools. Refrigerate for at least two hours or overnight.
