Step 1
Add the lemon juice, sugar, rice vinegar and water to a small saucepan. Using a handheld whisk, mix all the ingredients until combined.
Step 2
Place the saucepan over low heat. Simmer for about 5 minutes, whisking every now and then to ensure the mixture doesn't stick to the pan.
Step 3
Add in the cornflour, and continue to whisk until the lemon sauce has thickened up. If it's too thick, add a little more water. If you feel it's too thin, add a tad bit more cornflour.
Step 4
Serve hot or cold as desired.
